For the past few months, the cooling fan is running all the time, not straight away when the engine starts. It doesn't run for about 1 minute then starts running as fast as it will go, outside temperature can be -5 right up to 20 degrees. I have changed 2 temperature sensors, 1 on the radiator, and 1 behind the thermostat.

As Rich says, it's a CIM fault. Part of the whole horn/headlights/dimmer switch/etc problems. I've had this happen twice, apparently people have got a CIM update from Vauxhall (Around £70) and thats fixed it, but personally I'd check your left hand steering controls work properly at max brightness with the headlights on, and the horn works with headlights on, else, you may get a new CIM due
